Easy Vegetarian Sloppy Joes

2 boxes (8 patties) “Flame-grilled” Boca Burgers, thawed or defrosted
1/4 medium red onion, finely chopped
1-1/4 cup ketchup
2/3 cup brown sugar
8 large sesame seed buns
2 tablespoons olive oil
grated or sliced cheddar chees (optional)

1. In a large skillet, add the olive oil and the onions. Saute on medium heat for a couple minutes.

2. Crumble the Boca burger patties into the skillet; use a spatula to break up larger pieces. Saute on medium heat for a couple minutes.

3. Add the brown sugar and ketchup, stirring well. The color should be uniform. Saute on medium heat for a couple minutes, then simmer on low heat for about ten minutes.

4. Serve hot on sesame seed buns. If you like, add greated or sliced cheddar on top. Serves eight.

This has become a favorite comfort food in our household. It is pretty quick to make and everyone loves them. Even if you do not plan on serving eight sandwiches, I advise making your batch that size. The sloppy joe mixture stores well in the refrigerator for several days, and microwaves quickly.
